To open a coconut of course! This morning we tackled the coconut we got from Bountiful Baskets. Marc had seen people open a coconut on his mission and then use the insides to make a yummy coconut shake so we put him in charge of the coconut business. We don't have a fancy machete to open them with so he did the next best thing, use a hammer!
As he was whacking away at the thing he said "I think I'm coconut deficient." Then I had the bright idea of using the claw end, which worked great, it cracked it open and the next thing we knew out came the milk.

Scraping it with a spoon didn't work, but the kids had a blast 'helping' Marc try. What he ended up doing was breaking it (yes, with the hammer) into smaller pieces, then he cut the meat - or as much as he could - off the shell. Then the kids would take the pieces and add them to the strained milk. This part took at least 45 minutes. At this point I said maybe we should have googled how to open a coconut or something.

SO 45 minutes later we had this: chunks of coconut, milk and a HUGE mess on the kitchen floor. After sweeping the floor, we strained the milk several more times, rinsed the chunks and put it in the blender.

We whipped it up and tried to liquefy it. He added some milk, a little sugar and some crushed pineapple to it.
And after all of that it was pasty. We just successfully made coconut paste, not a coconut milk shake like we were hoping. When I said "Have you ever made this before?" He said "Nope but I've had it before. Next time we should use a green coconut, I think it would work better." So now we have a pitcher of coconut paste/shake in our fridge, it tastes good, the texture is just a little . . . off.

After reading this post I decided to add a video to my facebook page. Marc you should watch it :)
Believe it or not, this is the second blog in a row where machetes were mentioned. My brother, Logan, DOES own one!
